Vegan Foodie: Yummy Sunday Breakfasts

Can’t we all agree that there is nothing better than making breakfast on a lazy Sunday morning? That being said, there is no reason that you need to cheat on your health kick in order to fulfill your hearty and sweet cravings. Today I’m going to show you three delicious breakfasts that I love to make! Check them out and let me know which one you’re going to try…

1) Make some pancakes.

  • 1/2 cup whole wheat flour
  • 1/3 cup wheat bran 
  • 1/4 cup flax seed meal
  • 1 tbsp agave nectar
  • 1/2 tbsp baking powder
  • 1/2 cup almond milk (I like to use Vanilla)
  • 1/2 tbsp vanilla extract
  • 1/2 tbsp lemon juice

Now you know the drill; mix it up! You’ll be left with about 4 thick, delicious pancakes. Feel free to use whatever toppings you would like! My favourites right now are apple sauce, bananas, and maple syrup!

2) Tofu Omelettes Anyone?

This recipe makes about 4 omelettes for you to share with your friends or family!

2 cloves garlic (optional)
1 14 oz package silken tofu, lightly drained (not the vacuum packed kind), or soft tofu
2 tablespoons nutritional yeast
2 tablespoons olive oil
1/2 teaspoon turmeric
1 teaspoon unrefined sea salt
1/2 cup chickpea flour
1 tablespoon ground flax seed mixed with 2 tablespoons of water

Chop up the garlic and then add the tofu, nutritional yeast, olive oil, turmeric and salt. Puree until smooth. Add the chickpea flour and flax/water mixture and puree again for about 10 seconds. Make sure to scrape down the sides so that everything is well incorporated.

Preheat a large pan on medium-high heat. Lightly grease with a thin layer of olive oil. In 1/2 cup measurements, pour omelette batter into the pan. Move the pan around so that the batter can spread out over the pan. Make sure to be gentle when spreading it out, if there are any rips or holes just gently fill them in as you spread the batter. Let cook for about 3 to 5 minutes before flipping. The top of the omelette should dry and become a dull matte yellow when ready to flip. If you begin to flip it and it seems like it might fall apart, give it a little more time. When the omelette is ready to be flipped, the underside should be flecked with light to dark brown when it is ready to flip.  Flip the omelette and cook for about a minute on the other side. Now you can stuff your omelette with fillings of your choice before you fold it over. As for fillings, here are some of my favourite combinations: mushrooms and spinach, diced tomatoes with ricotta and some mixed beans, or salsa with spinach and any other veggies you can find.

3) Breakfast Muffins? Yes, Please!

2 cups rolled oats

2 cups juice (I usually use orange or guava juice)

1 cup mashed bananas– about 2 bananas (or you can use apple sauce)
1/4 tsp ground flax
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
2 cups whole wheat flour

2 cups raspberries (I like to use frozen but fresh would also work just cut down the baking time)

Directions:
Preheat the oven to 400 °F
1. Soak the oats in juice until soft, about 10-15 minutes
2. Add the banana pulp (or applesauce, if using) and mix.
3. Mix in the salt, baking powder, baking soda, cinnamon, and nutmeg.
4. Add the flour and stir until just mixed.
5. Fold in the raspberries.
6. Fill muffin tins, about 3/4 full, and bake until lightly browned, about 20 minutes.

4 Summer Fitness Tips

Fitness is a really important part of my life and it should be that way for everyone! Here are 4 important things I do to stay healthy in the summer!

1. Go outside! Use the nice weather to your advantage and go outside. You can do so many things outside such as taking a walk, riding your bike, going for a run, jumping rope, or swimming in a pool if you have one.

2. Eat a lot of fruit! This is something that you should do everyday however I find it easier to do in the summer. Some of the fruits I’ve been reaching for a lot this season are watermelon, kiwi, nectarines, berries, and bananas.

3. Stay hydrated! Personally, year round, I am always drinking water 24/7 but be sure to drink up in the summer especially. Also, I would definitely recommend adjusting your diet so that the only thing you drink is water.

4. Get your beauty sleep! In the summer, for those of us who are still in school, it is easy to mess up our sleeping schedule. Make sure you are getting at least 8 hours of solid sleep because it has so many benefits for your body and mind.

 

My Favourite Youtubers and Why!

Nowadays  I think every girl has watched at least 20 thousand beauty youtube videos. Today I’m going to tell you my favourite youtubers and why I love them!

Okay first off, you need to find a beauty guru who has your skin type. For the longest time I just watched youtubers who had oily skin and really, that didn’t help me at all and just wasted my time. Now, I have some dry skin youtuber favourites! 🙂 Here are my favourite girls (in no particular order!)

Number 1: MissJenFABULOUS Okay so I honestly only watch her nail videos but I love her nail tutorials. They are so informative, creative, and helpful. Go check out her newest video on Easter nail art!

Number 2: TheMakeupChair is an amazing, amazing, amazing youtube beauty guru! She is a makeup artist who is very knowledgeable and although she has dry skin, she talks about products for all skin types.

Number 3: MacBarbie07 I’m sure that you all know Bethany and her fun, happy, and charming personality she brings into her videos. They put me in a better mood and are also put together quite nicely. Bethany is someone that you can’t go wrong with and she’s super sweet!

Number 4: AllThatGlitters21 I love Elle! She’s so sweet and her room is so elegant and gorgeous! Elle has the cutest white cat and I swear, Elle is as pure as Pinecone’s fur. Elle also has dry skin which is a total plus however she doesn’t normally shop at drugstores like I do because I have a very low budget!

Number 5: Blogilates Last but not least we have to throw in some fitness videos! Cassey has a big personality that makes you want to keep doing those squats even if you’re dying . I love when she gets off topic and starts talking about random things because it makes me forget that I feel like I’m dying!

All About Legging Laws!

Who owns a pair of leggings? I’m guessing that about 99% of the people who are reading this are saying “Me!” The fact is, leggings have become a staple in the average girls closet and I can completely see why. They are comfortable, you can dress them up or down, there are so many options, and they let you show off the legs you run for everyday. At some point I’m sure that you’ve heard some “rules” about leggings, whether you follow them or not though is truly up to you. Here’s my take on the subject!

First off, invest in a good quality pair of leggings! They will be worth it in the long run because they won’t start getting see-through at the knees or thighs! Then decide what you’re wearing them for that day. If you will be using them for working out then it’s okay to not be religious with the every day rules however if you’re wearing them on a normal day then I suggest wearing a tunic length top with them. I am definitely not perfect and I have worn a shorter top with them and thoroughly regretted it (mostly because I don’t love my thighs!) A good choice for shoes would be boots! I prefer taller boots with leggings personally, but go with whatever you feel works best with your body. Lastly, have fun on top! Wear patters, colours, jewellery, makeup, and do your hair in your favourite up-do! Love you girls ❤ Any requests?
